Chef Manuel’s culinary journey began in the UNESCO heritage town of Toledo, Spain, laying the foundation for his sensory-driven approach to cooking. His culinary philosophy is simple yet profound – he aims for guests to savour the essence of each ingredient, embracing the richness of simple yet robust flavours that showcase the quality of our produce, where exceptional taste reigns supreme.
His restaurant – La Loca Maria, has become a culinary destination in Mumbai and is celebrated for his signature Spanish rice dish – Paella, Gambas Al Aljillo, Mushroom Truffle & Ham Croquettes, and the crowd favourite reimagined La Loca Tiramisu.
The evening will feature an exclusive 9 course vegetarian and non-vegetarian menu curated by Chef Manuel showcasing his approach to reimagining Spanish classics, offering a unique selection of dishes, including a Cherry Gazpacho, Ceviche, Beetroot & BFF Carpaccio, Spanish-style flatbreads (Cocas), and his signature desserts. Each dish highlights his commitment to quality and flavour, ensuring a memorable Spanish dining experience for all.
