Delhi, 04th October 2025: Rich flavours of the Himalayan ranges are coming to Delhi. Barbeque Nation is hosting an exclusive chef pop-up, ‘Flavours of Uttarakhand featuring Chef Yojana Khanduri’, celebrating the culinary essence of the mountain state from 6th -12th October. The outlet in Southern Park Mall, Saket, will fill with the tantalizing aromas of recipes passed down through generations. An entire menu from soup, starters, main course, sides and dessert has been planned using locally sourced ingredients from Uttarakhand.
Chef Yojana Khanduri is a culinary custodian, preserving the cherished recipes and cooking techniques she grew up watching in her grandmother’s mountain kitchen. Now, she is bringing the rich gastronomic legacy of her homeland to a wider audience, ensuring these traditions remain appreciated. Every dish she prepares honors the region’s abundant culinary offerings. For this pop-up, she has planned a proper meal menu that covers the best of the region.
The menu starts with a high-protein mixed pulses soup called Ras. For salads, there is Dal Salad, Mooli aur Malte ka Saan and Mutton Kachmoli, a traditional meat salad that’s both hearty and refreshing.
Starters bring the mountains to life with Patuddi and Dal Pakodi for vegetarians, while meat lovers can savor Bhaang Chicken and Sookha Mutton Shikaar. The main course is Chemi ki Dal, Chainsoo, Chachiya, Aloo or Arbi ke Gutke paired with Bedu Roti or Lal Bhaat (red rice). Non-vegetarian options include the rich Mutton Chapchapa and flavorful Chicken Shikaar. Traditional Bhaang Chutney, Til ki chutney and Pahadi Kheere ka Raita will add another layer of flavours to your plate. And for those sweet endings, Jhangore ki Kheer and Mandue ka Halwa promise a spoonful of sweet comfort.
