Ramenya Shima Opens First International Outpost in Hong Kong

Hong Kong, Mar 07: Tokyo’s celebrated ramen restaurant Ramenya Shima, widely recognised as one of Tokyo’s “Three Great Ramen Restaurants”, has launched its first international branch in Hong Kong at Sugar+ in Causeway Bay. The new flagship restaurant opens to the public on 7 March 2026, bringing the brand’s award-winning ramen and refined Japanese culinary experience to the city.

 To mark the opening, Hiroshi Morishima, Chef-Proprietor of Ramenya Shima, will personally oversee the kitchen during the soft-opening period. Known for his artisanal approach to ramen, Chef Morishima will prepare the restaurant’s signature bowls while also introducing a selection of Hong Kong-exclusive small plates and rice dishes.

A Legendary Ramen Experience

Headlining the menu is Ramenya Shima’s award-winning shoyu ramen, served in a clear soy-based broth known for its tanrei style—a light, crisp and refined flavour profile that highlights premium ingredients.

To maintain the highest quality standards, the Hong Kong flagship will serve only 120 bowls of ramen per day, reflecting the brand’s commitment to craftsmanship and authenticity. This approach mirrors the Tokyo flagship in Tokyo, where only 60 bowls are prepared daily.

The restaurant’s signature broth is crafted using nearly 30 premium ingredients, including Japanese chicken, scallops, clams, aged bonito flakes, sea bream head, kombu and fresh vegetables. These ingredients are simmered carefully to create a crystal-clear soup base rich in umami and complexity.

Three Signature Broths

The Hong Kong menu features three distinctive broth styles:

  • Shoyu (Soy Sauce): A layered blend of raw soy sauce and 11 varieties of soy sauce, delivering rich, balanced flavour.

  • White Shoyu: Enhanced with white truffle oil and black truffle paste for a refined finish.

  • Shio (Salt): A pure, delicate broth that highlights the natural taste of premium ingredients.

Chef Morishima’s handmade noodles are prepared fresh daily using five premium Japanese flours, including Hokkaido’s Kitahonami winter wheat, resulting in noodles that balance springiness, smoothness and chewiness.

Signature Ramen and Small Plates

The Hong Kong branch offers four varieties of ramen, including:

  • Wonton Ramen featuring handmade shrimp and pork wontons

  • Chashu Ramen with slow-cooked pork loin, pork chuck roll, and chicken chashu

  • Premium Ramen with grilled pork belly and assorted chashu

  • Ultimate Ramen featuring multiple chashu cuts, wontons and soft-boiled egg

The restaurant also showcases Chef Morishima’s expertise through five styles of chashu, including braised pork chuck roll, grilled pork belly, smoked pork chashu and slow-cooked pork loin.

In addition to ramen, diners can enjoy exclusive rice bowls and small plates, including:

  • Diced Chashu Donburi

  • Fried Chicken Nanban Donburi

  • Truffle Oil and Akatsuki Egg Donburi

  • Homemade Japanese Pork Dumplings

  • Chicken Nanban

Dessert options include Almond Panna Cotta, while beverage selections feature Japanese cider, teas and soft drinks.

A Minimalist Dining Space

Spanning nearly 1,200 square feet, the Hong Kong flagship features counter seating for 24 guests. The restaurant combines modern and traditional Japanese aesthetics, with warm wood tones and artistic accents creating an intimate ramen dining experience.

A traditional noren curtain façade welcomes diners into the cosy space, reflecting the spirit of Japanese hospitality and craftsmanship.
