Kashmiri cuisine, with its rich history, dates back to the 14th century, when influences from Central Asia, Persia, and Afghanistan shaped the iconic Wazwan, a multi-course feast that symbolises the region’s culture and pride. Chef Abdul Haleem brings this tradition to life at Food Exchange, offering an authentic menu that celebrates the heritage and flavours of Kashmir.

The festival will showcase the finest Kashmiri offerings, prepared with traditional spices such as saffron, fennel, cardamom, and Kashmiri red chilies. Guests will experience a variety of dishes, from tender meat delicacies to exquisite vegetarian options. Signature dishes include Gushtaba, delicate meatballs simmered in a creamy yogurt gravy, traditionally served at the grand finale of the Wazwan, and Tabakmaaz, succulent lamb ribs slow-cooked and fried to crispy perfection.

The menu also features Rogan Josh, a rich lamb curry with a vibrant red hue, and Dum Aloo, whole potatoes cooked in a spicy yogurt sauce. Vegetarian delights like Nadur Yakhni, lotus stems in a fragrant yogurt-based curry, and Razma Gogji, a flavorful mix of red kidney beans and turnips, will also be served, alongside the iconic Kashmiri Rajma.
