Accompanied by traditional breads such as Bhakarkhani, Reshmi Roti, Biscuit Roti, and Pizza Naan, each dish is a tribute to the rich culinary traditions of Old Delhi, recreated with authenticity and finesse for the people of Hyderabad.
Sharing his thoughts on the occasion, Mr. Amar Ohri, Executive Director, Ohri’s Group, said, “Food is emotion, and at Tansen, our vision has always been to elevate it into an experience. With the Dilli-6 Food Festival, we’re not merely showcasing dishes—we’re telling stories from the streets of Old Delhi that are steeped in history and flavour. This festival is our tribute to the culinary soul of India, and it gives us immense pride to bring these iconic flavours to Hyderabad in a setting that honours their cultural richness. We want our guests to not just eat, but feel the magic of Delhi’s gallis come alive in every bite.”
Mr. Neeraj Roy, General Manager, Tansen, added, “From the moment guests step into Tansen during the Dilli-6 festival, we want them to be transported to the heart of Purani Dilli. Every detail—be it the music, the ambience, the aroma, or the plating—has been thoughtfully curated to reflect the old-world charm of Delhi’s culinary havens. This festival is deeply personal for us. It brings together the nostalgia of street vendors, the refinement of age-old recipes, and the royal touch that defines Tansen’s spirit. We look forward to welcoming patrons and giving them an experience that is both soulful and memorable.”
According to Mr. Anuj Wadhawan, Consultant Chef for the festival, “This menu is built from memories. Each dish is rooted in the food I’ve cherished from Delhi-6 and recreated with authenticity and heart. We’ve stayed true to the ingredients and techniques that define these iconic recipes while bringing them to life in a refined dining environment. It’s a rare opportunity to blend rustic street magic with fine culinary presentation, and I’m delighted to be a part of it.”
