A culinary virtuoso with over 30 years of experience across 10 countries, Chef Raymond brings a fresh, creative vision to the iconic restaurant while staying true to its Cantonese roots.
Born in Malaysia, Chef Raymond embarked on his culinary journey at just 16, following in the footsteps of his father. His illustrious career has taken him to some of the finest Asian restaurants in Australia, Mauritius, Malaysia, Cambodia, Vietnam, and Singapore, where he earned global recognition for his innovative approach to Cantonese cuisine, particularly from China’s Sichuan region.
Chef Raymond’s passion lies in blending the traditional flavours of Cantonese cuisine with modern culinary techniques, creating an exceptional dining experience that is both familiar and new. His expertise in reinventing authentic dishes with a contemporary flair makes every meal at Hakkasan Mumbai a journey of discovery.
